Cooking with food intolerances

S’mores Bars March 14, 2012

My grandmother used to make S’mores bars when I was growing up: Golden Grahams cereal, marshmallows, melted chocolate chips, and who knows what else. I was trying to get that taste back again. My husband and I ate the entire pan!

2/3 c. coconut oil

2/3 bag of mini marshmallows (We can use Campfire Brand, which doesn’t contain food coloring)

2/3 bag of Enjoy Life chocolate chips

2 tsp. safe vanilla extract

3 c. cornflakes (I’ll find out the brand next time I go to the store!)

Melt oil, marshmallows, and chocolate chips. Remove from heat. Add vanilla. Add cereal. Stir to coat. Press into greased 9″x9″ pan.
