Cooking with food intolerances

4 Tbs. drippings (chicken, turkey or beef)

3 Tbs. sweet potato flour + 1 Tbs. sorghum flour

1/2 tsp. sea salt

1/4 tsp. pepper

2 c. broth

In saucepan, heat the drippings. Add flour and make roux (stirring until bubbly). Add salt and pepper. Add broth half cup at a time, bringing to a boil each time, until it’s the desired consistency (2 c. is right for us, but might not be right for you!).


S’mores Bars

My grandmother used to make S’mores┬ábars when I was growing up: Golden Grahams cereal, marshmallows, melted chocolate chips, and who knows what else. I was trying to get that taste back again. My husband and I ate the entire pan!

2/3 c. coconut oil

2/3 bag of mini marshmallows (We can use Campfire Brand, which doesn’t contain food coloring)

2/3 bag of Enjoy Life chocolate chips

2 tsp. safe vanilla extract

3 c. cornflakes (I’ll find out the brand next time I go to the store!)

Melt oil, marshmallows, and chocolate chips. Remove from heat. Add vanilla. Add cereal. Stir to coat. Press into greased 9″x9″ pan.
