What I was really craving was a McDonalds Apple Pie, not the new one that’s baked instead of fried, but the old ones that were crackly on the outside and gooey on the inside.  They probably had too many calories to count! At the time, neither of my kids could have apples, so I made it with pears. I used the spring roll wrappers that are either rice or rice and tapioca. They come dry, and then you have to soak them until pliable, then wrap them around the item. If you only use one, they’re too thin, and the filling will come out. The flavor was perfect!

1 pear, diced

2 tsp. tapioca starch

2 tsp. safe sugar

pinch of cinnamon

spring roll wrappers

Follow directions on spring roll wrapper to use. Layer two wrappers, then put in two teaspoons of filling in the bottom third of the wrapper. Fold in the sides, then roll. It will seal to itself. Fry in 350F oil (I use canola in my deep fryer) for 3-4 minutes. Drain. Serve warm.
