No, my son can’t have these because of the eggs, but they’re really good. I try to make them after he goes to sleep so he doesn’t feel deprived.
1 c. natural peanut butter
1 c. brown sugar
1 tsp. baking soda
1/2 c. sweet potato flour or tapioca starch
Mix all ingredients. Scoop dough onto insulated baking sheet. Flatten with fork dipped in cane sugar; making criss-cross pattern. Bake in preheated 375F oven for 15 minutes.
