The chocolate fudge recipe that I had used way too many steps, but I wanted fudge, so I tried to make one with as few ingredients as possible.

2 c. maple syrup

3/4 c. coconut milk

1 tsp. corn-free vanilla

1/8 tsp. sea salt

3/4 c. chopped walnuts (optional)

Combine maple syrup, coconut milk, and sea salt, and simmer in a heavy saucepan until it reaches soft ball stage (230F) on a candy thermometer. Let cool to lukewarm. Beat mixture until it thickens. Add vanilla and nuts (if using). Spread into greased 8″x8″ square pan. Let cool completely.
