Cooking with food intolerances

At the time I made this recipe, my son couldn’t have rice, I couldn’t find any kielbasa that was safe, and shrimp was also out for one of the kids, so I tried to make something similar to the taste of jambalaya.

1 Tbs. canola oil

1 c. chopped onion

1 c. chopped pepper

1 tsp. sea salt

1/4-1/2 tsp. cayenne pepper

1/2 lb. safe ham, diced

2 bay leaves

2 cloves garlic, minced

3 1/2 c. canned tomatoes

1 c. hulled millet

In a heavy saucepan, heat oil over medium heat. Saute onion and pepper, seasoned with sea salt and cayenne pepper. Add ham, bay leaves, tomato,  garlic, and millet. Cover and cook for 35-40 minutes, until the millet is has absorbed most of the moisture.
