Cooking with food intolerances

One of my fondest memories of childhood was when my mother would take me to Reads, a fancy department store, and after shopping, we’d go to the top floor where there was a restaurant. I don’t ever remember eating a meal though, but I remember ordering the same dessert every time: ice cream crepes. So although crepes can be savory, I always think they’re dessert.

2 eggs

1 Tbs. olive oil

1 Tbs. sugar

3/4 c. sorghum flour

1/4 c. tapioca starch

1 1/2 c. rice or almond milk

Mix all ingredients. Grease a round frypan and heat to medium. Pour one-third cup of batter onto frypan and swirl to coat. Cook one minute, slip and cook one minute on the other side. Serve with fruit or safe ice cream, and/or top with banana slices sauteed in coconut oil and maple syrup (since my son can’t have egg, he just likes the sauteed banana slices).
