Chocolate Coconut Cookies January 12, 2011

1/2 c. cocoa

1 c. finely chopped coconut

2 tsp. corn-free vanilla

1 tsp. baking soda

1/2 tsp. corn-free baking powder

2 Tbs. coconut milk

1/2 c. coconut oil

1/2 c. palm shortening

1/2 c. tapioca starch

1 1/2 c. sorghum flour

3 tsp. karaya gum

1/2 tsp. sea salt

2 flax eggs

1/4 c. maple syrup

1 1/4 c. beet or cane sugar

Mix all ingredients together. Scoop onto ungreased insulated baking sheet. Bake in preheated 350F oven for 11-13 minutes.
