This was a recipe which I made up on the fly to get more kale into our diet.
1 whole boneless chicken breast, cubed
1/4 Vidalia onion, finely chopped
4 kale leaves, chopped
3-4 large mushrooms, thinly sliced
2-3 Tbs. olive oil
1/2 c. canned tomatoes
1/2 tsp. crushed red pepper
sea salt & pepper to taste
Saute onions, mushrooms, and kale in 1 Tbs. olive oil until tender. Remove from pan. Saute chicken in remaining olive oil, until juices run clear. Place vegetables back in the pan, along with crushed red pepper and canned tomatoes. Simmer covered for 10 minutes. Serve over rice pasta.
