Cooking with food intolerances

Even when the whole family could have gluten, I never mastered a pie crust (even with the unfailing patience of a neighbor trying to teach me). So I gave up.

4 strips bacon

1 green pepper, sliced

1/2 sweet onion, sliced

1/2 c. chopped broccoli

1/2 c. coconut milk

1/4 tsp. black pepper

1/2 tsp. sea salt

1/2 c. pine nuts, soaked for 30 minutes

1/2 tsp. dried oregano

1 Tbs. nutritional yeast

6 eggs

In a food processor, puree pine nuts until smooth, with a little water. Fry 4 pieces of bacon until crisp. Remove and drain. In bacon grease, saute onion, pepper, and broccoli. Remove. Crack 6 eggs into a bowl; beat with coconut milk. Add pine nut puree, crumbled bacon, vegetables, and seasonings. Pour into pie plate. Bake at 325F for 45-50 minutes.
